The tenderloin (filet) is the most tender cut of beef, making it a highly desirable cut. This, combined with the small amount per animal, makes the filet mignon generally the most expensive cut. Because the muscle is not weight-bearing, it contains less connective tissue than other cuts, and thus is more tender. The only steak that rivals the tenderloin would be the ribeye. The ribeye steak has a higher fat content and is more flavorful, but some people prefer less fat and thus choose the filet.

Weights and Cuts:

Due to natural variations in our cattle, shape, size, and/or weight of individual cuts may vary. It is normal to see slight variations in color depending on both the type of product and the aging process.

OUR GUARANTEE:

Unless otherwise indicated, all Sunset Whiskey Ranch Cattle Co. products come vacuum sealed, frozen and are guaranteed in your freezer (at 0°F) from 6 months to one year, depending on the product.

Upon Delivery of a Shipped Product:

Your SWR product will arrive frozen or partially frozen in a foam insulated shipping container with dry ice and/or reusable gel freezer packs.

If the Dry Ice is not completely thawed, DO NOT TOUCH! Please place your products in the freezer immediately upon receipt if not intending to use the same day. Leave Dry Ice in foam container to evaporate on its own.
